  • 2 tablespoons fresh lemon juice, divided
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced (optional)
  • Salt and freshly ground black pepper to taste (about ½ teaspoon salt and ¼ teaspoon pepper)
  • Optional add-ins: ¼ cup dried cranberries or cherries, ⅓ cup crumbled feta or goat cheese, ½ cup cooked quinoa, 1 apple or pear thinly sliced

Instructions

  1. Prep the kale (5 minutes): Wash the kale thoroughly under cold water. Pat it dry with a clean kitchen towel or use a salad spinner. Remove the tough stems by holding the stem at the base and stripping the leaves upward. Stack the leaves, roll them tightly, and slice crosswise into thin ribbons (about ½ inch wide). This is called chiffonade, and it makes the kale easier to eat.
  2. Massage the kale (5 minutes): Place the sliced kale in your large mixing bowl. Drizzle with 2 tablespoons of olive oil and a squeeze of lemon juice (about 1 tablespoon). Sprinkle with a pinch of salt. Now, get your hands in there. Gently squeeze and rub the leaves for 2-3 minutes. You’ll feel them soften and darken in color. Keep going until the kale feels silky and tender. This step is non-negotiable—it’s what transforms tough kale into something luxurious.
  3. Toast the almonds (3 minutes): Heat a small skillet over medium heat. Add the sliced almonds in a single layer.   4. Extract the pomegranate seeds (5 minutes): Cut the pomegranate in half horizontally. Hold one half cut-side down over a bowl. Tap the back firmly with a wooden spoon. The seeds will rain down like jewels. Rotate the half as you go. Repeat with the other half. Pick out any white pith that falls in.
  5. Make the dressing (2 minutes): In a small bowl or mason jar, combine the remaining 2 tablespoons olive oil, 1 tablespoon lemon juice, honey or maple syrup, Dijon mustard, minced garlic (if using), and a pinch each of salt and pepper. Whisk vigorously or shake until emulsified. Taste and adjust—more lemon for tang, more honey for sweetness.
  6. Assemble the salad (5 minutes): Pour the dressing over the massaged kale. Toss well with your hands or tongs until every ribbon is coated. Add the pomegranate seeds, toasted almonds, and shaved Parmesan. Toss gently to combine.
  7. Final touch and serve: Transfer to a serving platter or individual plates. Add an extra sprinkle of flaky sea salt and a few more Parmesan shavings on top for presentation. Serve immediately, or let it sit for 10-15 minutes to allow flavors to meld.
