A quick, refreshing, and guilt-free frozen yogurt bark made with Greek yogurt, mixed berries, honey, and a few simple ingredients. Perfect for hot days and easy to customize.

  • 2 cups (480 ml) full-fat Greek yogurt
  • 1 cup (150 g) mixed berries (fresh or frozen blueberries, strawberries, raspberries, or blackberries)
  • 2 tablespoons (30 ml) honey
  • 1 teaspoon (5 ml) vanilla extract (optional)
  • 1/4 cup (30 g) chopped nuts or seeds (pistachios, almonds, chia seeds) – optional

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, combine 2 cups (480 ml) full-fat Greek yogurt with 2 tablespoons (30 ml) honey and 1 teaspoon (5 ml) vanilla extract. Stir gently until honey is evenly incorporated.
  3. Spread the yogurt mixture evenly on the lined tray to about 1/4 inch (0.6 cm) thickness using a spatula or spoon.
  4. Scatter 1 cup (150 g) mixed berries evenly over the yogurt. If using nuts or seeds, sprinkle 1/4 cup (30 g) on top and press lightly.
  5. Freeze the tray for at least 4 hours or overnight until the yogurt is solid.
  6. Lift the frozen bark out using the parchment paper edges and break or cut into irregular pieces.
  7. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use full-fat Greek yogurt for creaminess. Mix honey into yogurt for even sweetness. Keep yogurt layer thin (~1/4 inch) for quick freezing and easy breaking. Freeze at least 4 hours for best texture. Use parchment paper to prevent sticking. Pat frozen berries dry to avoid excess moisture. Strain yogurt if too watery for thicker bark. Store in airtight container in freezer up to 2 weeks.
