  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 large red bell pepper, cut into 1.5-inch pieces
  • 1 large yellow bell pepper, cut into 1.5-inch pieces
  • 1 medium red onion, peeled and quartered
  • 1 medium zucchini, sliced into thick rounds
  • 8 cherry tomatoes (optional)
  • Wooden or metal skewers
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. In a large bowl, combine olive oil, minced garlic, honey, lemon juice, smoked paprika, oregano, salt, and pepper. Whisk until blended.
  2. Add the chicken chunks to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours for deeper flavor.
  3. While the chicken marinates, wash and chop the bell peppers, onion, zucchini, and tomatoes into uniform pieces.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Skip this step if using metal skewers.
  5. Thread chicken and vegetables alternately onto the skewers, starting with a piece of chicken, then bell pepper, onion, zucchini, and repeat, ending with chicken or tomato.
  6. Preheat the grill to medium-high heat (about 375-400°F).
  7. Place skewers on the grill and cook for 5-6 minutes per side, turning carefully with tongs. Chicken is done when internal temperature reaches 165°F and juices run clear.
  8. Remove skewers from the grill and let rest for 5 minutes before serving.

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Marinate chicken for at least 30 minutes, preferably 1-2 hours or overnight for best flavor. Oil grill grates lightly before cooking to prevent sticking. If veggies cook faster than chicken, slide them toward the cooler edges of the grill.
