  • 8 thinly sliced lean turkey breast slices (nitrate-free, low-sodium preferred)
  • 4 ounces (115g) softened cream cheese (full-fat or light)
  • 23 fresh spinach leaves per roll-up (washed and dried)
  • 1 small clove garlic, minced
  • 2 tablespoons chopped chives
  • 1 tablespoon fresh dill, finely chopped
  • Zest of half a lemon (optional)
  • Freshly ground black pepper, to taste
  • Pinch of salt (optional)
  • 1 teaspoon olive oil (optional, for brushing turkey)

Instructions

  1. In a medium mixing bowl, combine softened cream cheese with minced garlic, chopped chives, dill, lemon zest, and a pinch of black pepper. Mix until creamy and well combined. If cream cheese is too firm, microwave for 10 seconds to soften.
  2. Lay out 8 turkey breast slices on a clean surface. If slices are thick, gently press them down for easier rolling. Optionally brush each slice lightly with olive oil.
  3. Spread about 1 tablespoon (15g) of the herb-infused cream cheese evenly over each turkey slice, leaving a small margin on the edges.
  4. Place 2-3 fresh spinach leaves on top of the cheese layer on each slice.
  5. Roll each turkey slice tightly from one edge around the cheese and spinach. Place seam side down on a serving plate. Optionally secure with a toothpick.
  6. Serve immediately or cover and refrigerate for up to 2 hours to let flavors meld. Serve chilled or at room temperature.

Notes

If cream cheese firms up while spreading, warm it briefly in the microwave to keep it workable. Roll tightly but not so tight that filling squeezes out. Fresh herbs are preferred for best flavor; dried herbs can be used at half the amount. Store roll-ups in an airtight container lined with parchment paper for up to 2 days refrigerated. Avoid microwaving to reheat; let sit at room temperature instead.
