This homemade chicken noodle soup is light, satisfying, and easy to make with simple ingredients. The whole chicken simmers with vegetables for rich flavor without extra steps.

  • 1 whole chicken (3–4 pounds)
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups water or low-sodium chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the vegetables (5 minutes): Dice the onion, slice the carrots into rounds, and slice the celery. Mince the garlic. Set everything aside.
  2. Sauté the aromatics (8 minutes): Heat the olive oil in a large stockpot over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the carrots and celery, and cook for another 3 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the chicken and liquid (2 minutes): Place the whole chicken in the pot, breast side up. Pour in the water or broth. Add the bay leaves, dried thyme, salt, and pepper.
  4. Bring to a boil, then simmer (30-35 minutes): Bring the liquid to a boil, then reduce heat to low and simmer gently, covered, until the chicken reaches 165°F internally and meat pulls away from bone.
  5. Remove and shred the chicken (10 minutes): Carefully lift the chicken out of the pot and let cool. Shred the meat, discarding skin and bones.
  6. Cook the noodles (8-10 minutes): Bring the broth back to a boil. Add the egg noodles and cook according to package directions until tender.
  7. Return the chicken to the pot (1 minute): Add the shredded chicken back to the pot. Stir to combine. Taste and adjust seasoning. Remove bay leaves.
  8. Serve and garnish (2 minutes): Ladle soup into bowls and sprinkle with fresh parsley. Serve hot.

Notes

For a lighter soup, skim the fat after simmering. Cook noodles separately if making ahead to prevent mushiness. Use the bones for bonus stock by simmering with fresh water for another hour. If broth tastes thin, simmer uncovered for 10-15 minutes to concentrate flavors.
