  • 1 cup (240ml) water
  • 2 tablespoons (30g) pumpkin puree (100% pure, not pumpkin pie filling)
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract (pure)
  • Pinch of salt

Instructions

  1. Combine sugar and water in a small saucepan. Whisk gently until sugar starts to dissolve.
  2. Add pumpkin puree, cinnamon, nutmeg, ginger, cloves, and salt. Whisk until smooth and orange.
  3. Bring to a gentle simmer over medium heat (about 2-3 minutes). Do not let it boil.
  4. Simmer for 2-3 minutes, whisking every 30 seconds, until slightly thickened and color deepens.
  5. Remove from heat and stir in vanilla extract.
  6. Let cool for 5 minutes. Optionally, strain through a fine-mesh strainer for a smoother texture.
  7. Pour into a clean glass bottle or jar using a funnel. Leave 1 inch of headspace. Cool completely at room temperature before sealing.

Don’t skip the salt—it enhances the spices. Use room temperature ingredients for best results. The syrup thickens slightly as it cools. If it crystallizes, gently warm the bottle in warm water. For a smoother texture, strain through a fine-mesh strainer. The flavors improve after a day in the fridge.
