How to Make a Festive Turkey Charcuterie Board for Thanksgiving

This turkey-shaped charcuterie board is a fun, no-cook appetizer that serves as a stunning centerpiece for Thanksgiving. It’s easy to assemble with simple ingredients and is always a crowd-pleaser.

  • 1 small wheel of brie or camembert (about 8 ounces)
  • 1 small log of goat cheese (about 4 ounces)
  • 2 whole black olives (pitted)
  • 1 small piece of red bell pepper (about 1 inch)
  • 1 piece of yellow bell pepper (about 1 inch)
  • 1 box of rosemary and olive oil crackers (about 8 ounces)
  • 1 package of prosciutto (about 4 ounces)
  • 1 package of salami (about 6 ounces)
  • 1 cup of mixed olives (green and kalamata)
  • 1/2 cup of marinated artichoke hearts
  • 1/2 cup of roasted red peppers (sliced into strips)
  • 1/2 cup of cherry tomatoes (halved)
  • 1/4 cup of fresh rosemary sprigs
  • 1/4 cup of pecans or walnuts
  • 1/4 cup of dried cranberries or figs
  • 1 small bunch of fresh grapes (red or green)

Instructions

  1. Prepare your board: Wipe your board clean and place it on your serving surface. Visualize where the turkey body will goโ€”about one-third of the way from the bottom, centered. The tail feathers will fan out above it, taking up the remaining two-thirds of the board.
  2. Shape the turkey body: Take the brie wheel and place it in the center of the bottom third of the board. If your brie is a perfect circle, that’s fineโ€”it looks like a plump turkey body. If you want a more oval shape, use your offset spatula to gently press and shape it.
  3. Create the turkey head: Place the goat cheese log about 2 inches above the brie, centered. This will be the head. It should be slightly smaller than the brie. Use your fingers to gently round the top of the log so it looks like a little bird head.
  4. Add the face details: Press two whole black olives into the goat cheese for eyes. Cut a small triangle from the yellow bell pepper and insert it below the eyes for the beak. Cut a small teardrop shape from the red bell pepper and place it just below the beak for the wattle. Use toothpicks to secure these if they feel loose.
  5. Build the tail feather base: Starting from the top of the brie (the back of the turkey), arrange the rosemary crackers in a fan shape. Place them in concentric arcs, working outward. The first row should be tight against the brie, and each subsequent row should radiate out. You want about 3 to 4 rows of crackers.
  6. Layer the prosciutto feathers: Take each slice of prosciutto and gently fold it into a loose ribbon. Place these ribbons between the crackers, letting the edges curl up to look like feather tips. Alternate the direction of the folds so it looks natural and textured. Use about 6 to 8 slices.
  7. Add the salami feathers: Fold each salami slice into quarters (fold in half, then in half again). Arrange these in a row along the outer edge of the fan, with the folded points facing outward. This creates a scalloped edge that mimics the tips of turkey feathers. Use about 10 to 12 slices.
  8. Scatter the accents: Fill in the gaps between the crackers and meat with olives, artichoke hearts, and roasted red pepper strips. Place the red pepper strips so they peek out from under the meat. Tuck the cherry tomatoes and dried cranberries around the edges of the board.
  9. Add the finishing touches: Place the fresh grapes in small clusters around the board. Sprinkle the pecans and walnuts in the empty spaces. Tuck small sprigs of fresh rosemary between the crackers to look like tiny feathers or greenery.
  10. Final check and serve: Step back and look at your turkey. Does the fan look full? Fill any bare spots with extra olives or grapes. Make sure the face is clearly visible and the body looks plump. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 2 hours. Remove from the fridge 20 minutes before serving to let the cheese soften.

Notes

If the goat cheese head feels too soft to hold the olive eyes, pop it in the freezer for 5 minutes before assembling. Use room temperature cheese for easier shaping. Prep all ingredients before starting assembly. For a vegetarian version, skip the meats and add more cheese varieties or roasted vegetables.
