  • 1 teaspoon garlic powder

  • ½ cup (120 ml) mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon dill pickle relish
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon smoked paprika
  • Pinch of salt and pepper
  • 4 burger buns, toasted (preferably brioche)
  • 4 slices cheddar cheese (optional)
  • Leafy lettuce

Instructions

  1. In a large mixing bowl, combine the ground beef with salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Gently mix until just combined, about 2-3 minutes.
  2. Divide the beef mixture into 4 equal portions (about 6 ounces or 170 grams each). Shape each into a round patty about ¾ inch (2 cm) thick. Press a small, shallow indentation in the center of each patty with your thumb to prevent puffing up during cooking. This takes about 5 minutes.
  3. In a small bowl, whisk together mayonnaise, ketchup, mustard, dill pickle relish, apple cider vinegar, smoked paprika, salt, and pepper until smooth. Taste and adjust seasoning if needed. Refrigerate until ready to use, about 5 minutes.
  4. Preheat your grill, grill pan, or skillet over medium-high heat for about 5 minutes until hot.
  5. Place patties on the grill or pan. Cook for 3-4 minutes on the first side without moving them. Flip carefully and cook another 3 minutes for medium-rare, or 4-5 minutes for medium. Add cheese slice during the last minute if using, cover loosely to melt. Use a meat thermometer to check for 160°F (71°C) for well-done.
  6. While patties cook, toast the buns cut-side down on the grill or in a toaster until golden and slightly crispy, about 1-2 minutes.
  7. Assemble the burgers by spreading secret sauce on both bun halves. Layer lettuce, tomato, red onion, and pickles on the bottom bun. Add the cooked patty with melted cheese on top, then crown with the top bun.

Do not overmix the beef to keep patties tender. Press a shallow indentation in the center of patties to prevent puffing. Use a meat thermometer to ensure proper doneness.
