These chewy, nutty blondies feature brown butter and maple syrup for a deep, rich flavor that wins over even the biggest skeptics. Quick to make with simple ingredients, they’re perfect for family desserts and crowd-pleasing occasions.

Ingredients

Scale
  • ½ cup (1 stick, 113g) unsalted butter
  • 1 cup (200g) packed light brown sugar
  • ¼ cup (60ml) pure maple syrup
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour, spooned and leveled
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup (85g) chopped pecans, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two opposite sides.
  2. Brown the butter: Place ½ cup unsalted butter in a light-colored saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until the butter foams, the foam subsides, and brown specks form at the bottom (about 5-7 minutes). Remove from heat immediately when it smells nutty and turns golden-amber. Pour into a heatproof bowl to stop cooking.
  3. Let the brown butter cool for about 5 minutes. Whisk in the packed brown sugar and maple syrup until smooth and shiny. Add the egg and vanilla extract, whisking vigorously until well combined and slightly thickened.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Pour the wet mixture into the dry ingredients. Fold gently with a rubber spatula until just combined (no streaks of flour remain). The batter will be thick and slightly sticky.
  6. Fold in the toasted chopped pecans, reserving a small handful for topping if desired.
  7. Scrape the batter into the prepared pan and spread evenly. Sprinkle reserved pecans on top, pressing in gently.
  8. Bake on the middle rack for 22-26 minutes, until the edges are golden brown and set, and the center is still slightly soft and puffed. A toothpick inserted in the center should come out with a few moist crumbs (not wet batter).
  9. Cool the pan on a cooling rack for at least 30 minutes. Use the parchment overhang to lift the block out and cool completely on the rack before cutting into squares.

Notes

Don’t rush the brown butter; keep heat on medium and watch for brown specks and nutty aroma. Use room temperature egg to prevent grainy batter. Measure flour by spooning and leveling. Toast pecans for best flavor. Let blondies cool completely before cutting to avoid crumbling. For chocolate chip version, fold in ½ cup semi-sweet chocolate chips with pecans. For gluten-free, use a 1:1 gluten-free flour blend. For nut-free, omit pecans or substitute butterscotch or white chocolate chips.
