Light & Creamy Crockpot White Chicken Chili

A rich and satisfying white chicken chili made with simple, wholesome ingredients. This easy 30-minute prep recipe uses a crockpot for a creamy, soul-warming meal without heavy cream.

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 2 cans (15 oz / 425g each) white beans (Great Northern or cannellini), drained and rinsed
  • 3 cups (710 ml) low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (4 oz / 113g) diced green chiles
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon mild chili powder
  • 1 teaspoon salt (or to taste)
  • ยฝ teaspoon black pepper (or to taste)
  • ยฝ cup (120g) plain Greek yogurt, at room temperature
  • Juice of 1 large lime
  • Optional toppings: fresh cilantro, diced avocado, sliced jalapeรฑos, shredded Monterey Jack cheese, crushed tortilla chips, extra Greek yogurt

Instructions

  1. Place chicken breasts in the bottom of the crockpot. Sprinkle with salt and pepper. Scatter diced onion and minced garlic over the top.
  2. In a small bowl, mix cumin, oregano, and chili powder. Sprinkle evenly over the chicken and onions. Add the can of diced green chiles with their liquid.
  3. Pour chicken broth around the edges of the crockpot, avoiding washing the spices off the chicken.
  4. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken reaches 165ยฐF (74ยฐC) and shreds easily.
  5. While chicken cooks, drain and rinse both cans of white beans. Mash one can of beans in a bowl until mostly smooth with some chunks. Leave the second can whole.
  6. Remove cooked chicken from crockpot and shred with two forks or a hand mixer on low speed.
  7. Return shredded chicken to crockpot. Add both mashed and whole beans. Stir gently to combine.
  8. In a small bowl, whisk together Greek yogurt with ยผ cup of hot broth from the crockpot to temper it. Pour yogurt mixture into chili and stir. Add lime juice and stir again. Adjust salt and pepper to taste.
  9. Let chili rest for 5-10 minutes before serving. Serve hot with desired toppings.

Notes

For best results, use room temperature Greek yogurt to prevent curdling. Mash one can of beans for natural creaminess. Add lime juice at the end for brightness. Chili thickens as it sits; add broth when reheating if needed.
