These Light & Creamy Peanut Butter Protein Overnight Oats are a quick, no-cook breakfast that tastes like a hug. With over 20 grams of protein per serving, they keep you full until lunch and are perfect for meal prep.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) unsweetened almond milk
  • 1/4 cup (60g) plain Greek yogurt
  • 1 scoop (about 30g) vanilla protein powder
  • 2 tablespoons (32g) natural peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, extra peanut butter drizzle

Instructions

  1. Add the dry ingredients to your jar: 1/2 cup rolled oats, 1 scoop vanilla protein powder, and 1 tablespoon chia seeds (if using). Stir with a fork to combine.
  2. Add the wet ingredients: 1/2 cup unsweetened almond milk, 1/4 cup plain Greek yogurt, and 1 tablespoon honey or maple syrup. Do not stir yet.
  3. Add 2 tablespoons of natural peanut butter. For easier mixing, warm the peanut butter in the microwave for about 10 seconds.
  4. Mix everything together with a fork or small whisk until well combined, scraping the bottom and corners of the jar.
  5. Taste and adjust sweetness or peanut butter flavor as desired.
  6. Seal the jar and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats. If too thick, add a splash of milk. If too thin, add more chia seeds or oats and let sit for another hour.
  8. Add desired toppings (sliced banana, chocolate chips, chopped peanuts, extra peanut butter) and serve cold or warm (microwave 30-45 seconds).

Notes

For best texture, use rolled oats (not instant or steel-cut). Warm the peanut butter slightly for easier mixing. The oats keep in the fridge for up to 5 days. Add toppings just before serving. For a vegan version, use dairy-free yogurt and maple syrup. For gluten-free, use certified gluten-free oats.
