  • 4 oz Brie cheese (soft-ripened, triple cream if possible)
  • 4 oz Goat cheese log (plain or herbed)
  • 2 oz Aged cheddar (sharp, sliced thin)
  • 4 oz Prosciutto (thinly sliced)
  • 2 oz Genoa salami (sliced)
  • 1 cup Fresh grapes (red or green, chilled)
  • 1 medium Apple (Honeycrisp or Fuji, sliced thin and tossed in lemon juice)
  • 1/2 cup Fresh figs (if in season; otherwise dried figs)
  • 1/4 cup Dried apricots (unsulfured)
  • 1/2 cup Mixed nuts (almonds and walnuts, lightly toasted)
  • 1/2 cup Crackers (Mary’s Gone Crackers or similar)
  • 1/4 cup Thin breadsticks (or grissini)
  • 2 tbsp Fig jam (or fruit preserve)
  • 1 tbsp Honey (local if possible)
  • 1/4 cup Olives (Castelvetrano or Kalamata, pitted)
  • Fresh herbs for garnish (rosemary or thyme sprigs, optional)

Instructions

  1. Prep your cheese (2 minutes): Take the brie and goat cheese out of the fridge 15 minutes before you start so they soften slightly. Slice the aged cheddar into thin triangles or rectangles. Place the brie whole on the board, the goat cheese log sliced into rounds, and arrange the cheddar in a small pile.
  2. Prepare the fruit (3 minutes): Wash and dry the grapes. Slice the apple into thin wedges and toss them in a little lemon juice to keep them from browning. If you’re using fresh figs, cut them in half lengthwise. Arrange the fruit in small clusters around the cheese.
  3. Fold the meat (2 minutes): Take the prosciutto slices and fold each one in half, then in half again, so you get little ribbons. Roll the salami slices into small cylinders. Place the meat in separate piles on the board.
  4. Fill the bowls (1 minute): Spoon the fig jam into a small bowl. Drizzle a little honey into another small bowl. Place the olives in a third bowl. Set these bowls on the board, spaced out.
  5. Add the crunch (2 minutes): Scatter the mixed nuts around the board, filling in any gaps. Arrange the crackers and breadsticks in small stacks or fans.
  6. Garnish and final touches (2 minutes): Tuck a few sprigs of fresh rosemary or thyme around the board for color. Add the dried apricots in any empty spots. Step back and look at your board—if there’s a big empty space, add a few more nuts or crackers.
  7. Serve immediately: Place the board in the center of the table with small plates, napkins, and a cheese knife.

Notes

Take cheese out of the fridge 15-20 minutes before serving for best flavor. Don’t overcrowd the board; leave breathing room. Balance flavors and textures: creamy, salty, sweet, crunchy. Prep fruit and cheese a few hours ahead if needed. Store leftovers separately: cheese in wax paper, meat in airtight container, fruit and crackers separately.
