Light & Loaded Charcuterie Board for Two: Easy Perfect Date Night

A quick and easy charcuterie board for two that comes together in under 15 minutes. Perfect for a romantic date night or a special evening without the fuss of cooking.

Ingredients

  • 4 oz (110g) Brie or Camembert
  • 3 oz (85g) Aged Gouda or Manchego
  • 2 oz (55g) Goat cheese log
  • 3 oz (85g) Prosciutto
  • 2 oz (55g) Salami or Soppressata
  • 1 medium green or red apple
  • 1 cup (150g) red or green grapes
  • ยผ cup (40g) dried figs or apricots
  • ยฝ cucumber, cut into sticks
  • ยฝ cup (75g) cherry tomatoes, halved
  • ยผ cup (30g) almonds or walnuts, toasted
  • ยผ cup (40g) olives (Kalamata or Castelvetrano)
  • 2 tablespoons honey or fig jam
  • Fresh herbs (optional, for garnish)
  • 8–10 whole-grain crackers or crostini

Instructions

  1. Take the cheeses out of the fridge 5 minutes before you start to let them come to room temperature.
  2. Wash and prep the produce: rinse grapes and cherry tomatoes. Slice the apple into thin wedges (about 8 per apple) and toss with a little lemon juice to prevent browning. Cut cucumber into 2-inch sticks.
  3. Slice the cheeses: cut brie into wedges or leave whole if small, slice aged gouda into thin triangles, keep goat cheese log whole.
  4. Arrange the meats: fold prosciutto into loose ribbons or drape over the board. Roll salami slices into cylinders or fold in half.
  5. Place small bowls for olives, honey, and nuts on the board as anchor points.
  6. Lay down the cheeses around the board, leaving space between them.
  7. Add the meats near the cheeses, tucking them in naturally.
  8. Fill in gaps with apple slices, grapes, dried figs, cucumber sticks, and cherry tomatoes, aiming for color contrast.
  9. Sprinkle nuts into remaining empty spots.
  10. Drizzle honey over brie or goat cheese just before serving, or spoon fig jam into a small bowl.
  11. Fan crackers or crostini along one edge of the board.
  12. Garnish with fresh herbs if desired. Serve immediately or let sit at room temperature for up to 20 minutes.

Notes

Let cheeses come to room temperature for best flavor. Use the ‘rule of three’ for variety: three cheeses, three meats, three fruits, three crunch items. Keep wet and dry ingredients separate to prevent sogginess. Prep ingredients up to a day in advance and assemble just before serving.
