  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Prep the bread: Cut the loaf into 1-inch cubes. If bread is fresh, spread cubes on a baking sheet and toast at 300°F for 5-7 minutes until slightly dry.
  2. Make the custard: In a large bowl, whisk together 4 whole eggs and 4 egg whites until frothy. Add milk, maple syrup, vanilla, cinnamon, nutmeg, and salt. Whisk until smooth.
  3. Assemble the casserole: Place bread cubes in a greased 9×13-inch baking dish. Pour custard evenly over the top, pressing down gently with a spatula. Sprinkle nuts on top if using.
  4. Soak: Cover the dish with plastic wrap or foil and refrigerate for at least 30 minutes, preferably overnight.
  5. Bake: Preheat oven to 350°F. Let casserole sit at room temperature for 10 minutes. Bake uncovered for 40-50 minutes until golden brown and a knife inserted in the center comes out clean.
