Lighter Cranberry Brie Bites: Easy Puff Pastry Appetizer

These lighter cranberry brie bites are quick, easy, and packed with the perfect sweet-savory balance. Made with a lighter puff pastry, reduced brie, and a low-sugar cranberry compote, they deliver all the indulgence without the guilt.

  • 1 cup fresh or frozen cranberries
  • 2 tablespoons maple syrup
  • 1 teaspoon orange zest
  • 2 tablespoons water
  • 1 sheet puff pastry (about 10x10 inches), thawed
  • 4 ounces brie cheese, rind removed and cut into 16 cubes
  • 1 teaspoon fresh rosemary, finely chopped
  • Pinch of flaky sea salt

Instructions

  1. Make the cranberry compote: In a small saucepan, combine 1 cup cranberries, 2 tablespoons maple syrup, 1 teaspoon orange zest, and 2 tablespoons water. Bring to a simmer over medium heat. Cook for about 5 minutes, stirring occasionally, until cranberries have popped and mixture has thickened slightly. Remove from heat and let cool.
  2. Preheat oven to 400°F (200°C).
  3. Lightly flour a work surface. Unfold the thawed puff pastry sheet and gently roll it out to about 1/8 inch thick. Cut into 16 equal squares (4×4 grid).
  4. Cut the rind off the brie and cut into 16 small cubes, about 1/2 inch each.
  5. Place puff pastry squares on a parchment-lined baking sheet, spacing about 1 inch apart. Gently press down in the center of each square to create a slight indentation.
  6. Place one cube of brie in the center of each square. Top with about 1/2 teaspoon of cranberry compote.
  7. Bake for 12-15 minutes, until pastry is golden brown and puffed, and brie is melted and bubbly.
  8. Remove from oven and let cool on baking sheet for 2 minutes. Sprinkle with fresh rosemary and a pinch of flaky sea salt. Transfer to a serving platter and serve warm.

Notes

For extra-golden crust, brush pastry squares with beaten egg or milk before adding filling. Make cranberry compote up to 3 days ahead. Assemble bites up to 4 hours in advance and refrigerate until ready to bake. To freeze, assemble unbaked bites, freeze solid, then transfer to a freezer bag. Bake from frozen, adding 3-5 minutes to baking time.
