  • 2 tablespoons pure maple syrup
  • 1 teaspoon kosher salt

  • Fresh sage leaves (optional, for garnish)
  • Flaky sea salt (optional, for garnish)
  • Toasted pecans or walnuts (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Carefully cut each honeynut squash in half lengthwise. Use a spoon to scoop out the seeds and stringy bits.
  3. Place the butter in a small saucepan over medium heat. Melt and cook, swirling occasionally, until the butter turns golden brown and smells nutty (about 4-6 minutes). Remove from heat immediately and pour into a small bowl. If using sage leaves, drop them into the hot butter to crisp for about 30 seconds.
  4. To the brown butter, add the maple syrup, kosher salt, black pepper, and cayenne pepper (if using). Whisk until well combined.
  5. Place the squash halves in a large mixing bowl. Pour the brown butter mixture over them and toss gently until every half is well coated.
  6. Arrange the squash halves cut-side down on the prepared baking sheet in a single layer with space between them. Roast for 20 minutes.
  7. After 20 minutes, remove the baking sheet from the oven. Flip each squash half over so the cut side is facing up. Brush or spoon any accumulated pan juices over the tops. Return to the oven and roast for another 5-10 minutes, until tender when pierced with a fork and edges are caramelized.
  8. Transfer to a serving platter. Garnish with crispy sage leaves, flaky sea salt, and any other desired garnishes. Serve immediately.
