This simple homemade vanilla cinnamon syrup transforms ordinary coffee into a festive holiday treat. Made with just a few pantry ingredients, it’s perfect for a Christmas coffee bar, gifting, or cozy nights in.

Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 2 cinnamon sticks
  • 2 teaspoons pure vanilla extract
  • Optional: 1 vanilla bean

Instructions

  1. Combine the sugar and water in a small saucepan. Stir to start dissolving the sugar.
  2. Add the cinnamon sticks. If using a vanilla bean, split it lengthwise, scrape the seeds into the pot, and drop the pod in.
  3. Bring the mixture to a gentle simmer over medium heat (about 3-4 minutes). Do not boil.
  4. Stir occasionally to help the sugar dissolve completely.
  5. Once the sugar is dissolved and the mixture is simmering, let it cook for 5 minutes.
  6. Remove from heat and let cool for about 2 minutes.
  7. Stir in the vanilla extract.
  8. Let the cinnamon sticks and vanilla bean (if using) steep in the warm syrup for 10 minutes.
  9. Strain the syrup through a fine-mesh strainer into a clean glass jar or bottle. Discard the solids.
  10. Cool completely to room temperature before sealing the jar.

Notes

Do not boil the syrup; a gentle simmer is best. Let the syrup steep for 10 minutes after removing from heat for optimal flavor. Use pure vanilla extract for best results. The syrup can be stored in the refrigerator for up to 3 weeks. If it crystallizes, run the jar under warm water or microwave for 10-15 seconds.
