  • 4 oz Aged cheddar, sliced
  • 4 oz Goat cheese log
  • 6 oz Prosciutto, thinly sliced
  • 4 oz Genoa salami, sliced
  • 4 oz Soppressata, sliced (optional)
  • 1 large Honeycrisp apple, sliced
  • 1 cup Roasted figs (fresh or dried)
  • 1/2 cup Dried cranberries
  • 1 cup Mixed nuts (pecans, walnuts, almonds), toasted
  • 1/2 cup Pumpkin seeds (pepitas), roasted and salted
  • 1 cup Crackers (Raincoast crisps or water crackers)
  • 1/3 cup Fig jam or preserves
  • 1/3 cup Honey
  • 2 tbsp Whole grain mustard (optional)
  • Fresh rosemary sprigs for garnish
  • Edible flowers or dried orange slices (optional)
  • Flaky sea salt (Maldon)

Instructions

  1. Prep your fruits and nuts (10 minutes): Preheat oven to 400ยฐF (200ยฐC). Halve fresh figs and place cut-side up on a parchment-lined baking sheet. Roast for 8-10 minutes until soft and caramelized. While they roast, toast nuts in a dry skillet over medium heat for 3-4 minutes, shaking often until fragrant. Set aside to cool. Slice apple just before serving.
  2. Set up your spreads (2 minutes): Spoon fig jam and honey into small bowls or ramekins. If honey has crystallized, warm the jar in a bowl of hot water for a few minutes.
  3. Arrange the cheese (5 minutes): Place brie wheel whole on the board as centerpiece. Slice aged cheddar into thin triangles and fan them out in a line. Crumble goat cheese into small piles. Leave space between cheeses.
  4. Add the meats (5 minutes): Fold prosciutto slices into loose ribbons or roll into roses. To make a prosciutto rose, fold one slice in half lengthwise, then roll loosely from one end. Place on board and gently fan out top edges. Lay salami and soppressata slices in overlapping rows or fold into quarters.
  5. Scatter the fruits and nuts (3 minutes): Place roasted figs in small clusters around the board. Add apple slices in a fan pattern. Scatter dried cranberries and toasted nuts in empty spaces.
  6. Fill in with crackers (3 minutes): Arrange crackers in small stacks or overlapping rows, spread out so guests can reach from any angle.
  7. Garnish and finish (2 minutes): Tuck rosemary sprigs between items. Sprinkle flaky sea salt over goat cheese and apple slices. Drizzle honey over brie if desired. Serve immediately.

Notes

Take cheeses out of fridge 30 minutes before assembling for best flavor. Let meats sit out for 10 minutes after unwrapping to prevent tearing. Build board starting with dips and soft cheeses as ‘lakes’, then meats as ‘rivers’, and crunchy bits as ‘trees’. Assemble everything except crackers and apple slices up to 2 hours ahead; add those just before serving.
