Ingredients

  • Bone-in, skin-on turkey breast (5-7 lbs / 2.3-3.2 kg)
  • Unsalted butter (1/2 cup / 1 stick, softened)
  • Fresh rosemary (2 tablespoons, finely chopped)
  • Fresh thyme (1 tablespoon leaves)
  • Fresh sage (1 tablespoon, finely chopped)
  • Garlic (4 cloves, minced)
  • Lemon zest (from 1 lemon)
  • Kosher salt (2 teaspoons)
  • Black pepper (1 teaspoon, freshly ground)
  • Baking powder (1/2 teaspoon)
  • Olive oil (1 tablespoon)
  • Chicken or turkey broth (1 cup / 240 ml)

Instructions

  1. Prep the turkey breast (15 minutes): Remove the turkey breast from the fridge 30-45 minutes before cooking to take the chill off. Pat it completely dry with paper towels. Place the breast on a cutting board and gently loosen the skin from the meat using your fingers, creating a pocket for the herb butter.
  2. Make the herb butter (10 minutes): In a small bowl, combine the softened butter, chopped rosemary, thyme, sage, minced garlic, and lemon zest. Mix until evenly distributed.
  3. Season the turkey (10 minutes): Take about two-thirds of the herb butter and push it under the skin, spreading it evenly over the meat. Rub the remaining butter all over the outside of the skin. In a small bowl, mix the kosher salt, black pepper, and baking powder. Brush the turkey breast with olive oil, then sprinkle the salt mixture evenly over the entire surface.
  4. Prepare the pan (5 minutes): Pour the chicken or turkey broth into the bottom of your roasting pan. Place a wire rack inside the pan (if using) and set the turkey breast on the rack, skin side up.
  5. Roast the turkey (1 hour 15 minutes to 1 hour 45 minutes): Preheat your oven to 425°F (220°C). Place the turkey in the oven and roast for 15 minutes at this high temperature. Then, without opening the oven, reduce the temperature to 350°F (175°C) and continue roasting. Start checking the internal temperature at the 60-minute mark. Notes

Pat the skin completely dry for crispy skin. Use an instant-read thermometer for perfect doneness. The herb butter can be made up to 3 days ahead. For extra crispy skin, use a wire rack and start roasting at 425°F.
