  • 2 tablespoons olive oil, plus more for the baking sheet
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder (optional but recommended)
  • ½ teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly and pat dry.
  3. Trim both ends off the squash (about ¼ inch from each end).
  4. Slice the squash crosswise into ½-inch thick rings.
  5. Scoop out the seeds and stringy pulp from the center of each ring.
  6. Place the rings in a mixing bowl. Add 2 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon pepper, and optional garlic powder and paprika. Toss with your hands until evenly coated.
  7. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each ring.
  8. Roast for 10 minutes. Do not open the oven door.
  9. Remove the baking sheet from the oven and flip each ring using tongs.
  10. Return to the oven and roast for another 8 to 10 minutes, until golden brown and crispy on both sides.
  11. Let the rings rest on the baking sheet for 2 minutes.
  12. Serve immediately.

For best results, slice rings exactly ½ inch thick. Do not overcrowd the baking sheet. High heat (425°F) is essential for crispiness. Let rings rest on the hot baking sheet for 2 minutes after roasting to maintain texture. Season generously with salt to balance the squash’s natural sweetness.
