Perfect New Years Eve Champagne Chocolate Truffles (Easy Homemade)

These elegant champagne chocolate truffles are surprisingly easy to make in the microwave, with a silky ganache that’s perfect for New Year’s Eve celebrations.

  • 12 ounces (340g) semi-sweet or dark chocolate, finely chopped
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60ml) champagne or sparkling wine
  • 2 tablespoons (28g) unsalted butter, softened
  • Pinch of fine sea salt
  • 1/2 cup (60g) cocoa powder (for coating, optional)
  • 1/2 cup (60g) finely chopped nuts (for coating, optional)
  • Gold luster dust or edible glitter (for coating, optional)

Instructions

  1. Combine the finely chopped chocolate, heavy cream, and champagne in a microwave-safe bowl. Do not stir yet.
  2. Microwave the mixture in 30-second intervals on medium power (50-70%). After each interval, stir gently with a rubber spatula. Continue until the mixture is completely smooth and glossy, about 2 to 3 total minutes.
  3. Add the softened butter and pinch of salt. Stir until the butter is fully incorporated and the ganache is smooth and glossy.
  4. Press a piece of plastic wrap directly onto the surface of the ganache. Refrigerate for at least 2 hours, or until firm enough to scoop.
  5. Line a baking sheet with parchment paper. Use a small cookie scoop or teaspoon to scoop out portions of the chilled ganache (about 1 tablespoon each). Roll each portion between your palms to form a smooth ball.
  6. Place your chosen coating in a small bowl. Drop each truffle into the coating and roll until fully covered.
  7. Place the coated truffles back on the parchment-lined sheet. Refrigerate for another 30 minutes to set the coating.

Notes

For best results, use a champagne you enjoy drinking. If the ganache is too soft to roll, stir in a handful of finely chopped chocolate, reheat gently for 15 seconds, stir until smooth, and chill again. Run your hands under cold water before rolling to prevent the truffles from melting.
