  • 1/2 cup vegetable oil (or any neutral oil like canola or avocado oil)
  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar (light or dark)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt (fine sea salt)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 cup semi-sweet chocolate chips
  • Optional: 1/2 cup chopped pecans or walnuts, flaky sea salt for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a large bowl, combine pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract. Whisk vigorously until smooth and glossy.
  3. Add flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon directly into the bowl with the wet ingredients. Stir gently with a spatula or wooden spoon just until flour streaks disappear. Do not over-mix.
  4. Fold in chocolate chips with a few strokes until evenly distributed.
  5. Scrape batter into prepared loaf pan and spread evenly. Tap pan gently on the counter to release air bubbles.
  6. Bake for 55-65 minutes. At 45 minutes, check top; if browning too quickly, tent loosely with foil. Bread is done when a toothpick inserted in center comes out clean or with a few moist crumbs.
  7. Cool in pan for 15 minutes, then lift out using parchment handles and transfer to a wire rack. Cool completely before slicing.

Notes

Room temperature eggs prevent the oil from seizing. Do not over-mix the batter to avoid tough bread. Let bread cool completely before slicing to prevent crumbling. For dark pans, reduce oven temperature by 25°F and check for doneness 10 minutes earlier. Toss chocolate chips with 1 tablespoon flour to prevent sinking.
