  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef (80/20)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium beef broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 8 ounces dried lasagna noodles, broken into 2-inch pieces
  • 1 cup whole milk ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion and cook for 2-3 minutes until translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef and cook, breaking it up, until no pink remains (about 5-6 minutes). Do not drain fat.
  4. Sprinkle salt, pepper, oregano, basil, and red pepper flakes over the beef. Stir constantly for 1 minute.
  5. Add tomato paste and cook for 2 minutes, stirring frequently. Then add crushed tomatoes, diced tomatoes with juices, and beef broth. Stir, scraping the bottom of the pot.
  6. Bring soup to a boil, then add broken lasagna noodles. Stir, reduce heat to medium-low, cover, and simmer for 10-12 minutes until noodles are tender but al dente.
  7. Taste and adjust seasoning if needed.
  8. While soup simmers, mix ricotta, mozzarella, and Parmesan in a small bowl.
  9. Ladle hot soup into bowls and top with a dollop of the cheese mixture. Sprinkle with fresh parsley if desired.

Notes

Break lasagna noodles by hand for rustic texture. Do not overcook noodles; they continue cooking in hot broth. Toast tomato paste for deeper flavor. Let cheese topping come to room temperature for better melting. Soup tastes even better the next day. For freezing, cook noodles fresh when reheating.
