These quick champagne Jello shots are the perfect New Year’s Eve treat—fun, festive, and incredibly easy to make with just four ingredients. They come together in 15 minutes of active prep and deliver a wobbly, bubbly bite of pure joy.

  • 1 cup boiling water
  • 1 box (3 oz) flavored Jell-O (strawberry, raspberry, or peach)
  • 1 packet (about 2 teaspoons) unflavored gelatin powder
  • 2 tablespoons granulated sugar (optional)
  • Whipped cream (for topping, optional)
  • Edible glitter or sparkling sugar (for topping, optional)
  • Fresh raspberries or pomegranate seeds (for topping, optional)

Instructions

  1. Pour the champagne into a measuring cup and let it sit for 5-10 minutes to go slightly flat.
  2. Bring 1 cup of water to a rolling boil in a kettle or small saucepan.
  3. In a medium mixing bowl, combine the flavored Jell-O, unflavored gelatin powder, and sugar (if using). Stir briefly.
  4. Pour the boiling water over the Jell-O mixture and whisk vigorously for about 2 minutes until completely dissolved and clear.
  5. Slowly pour the slightly-flat champagne into the Jell-O mixture while whisking gently. Continue whisking for about 30 seconds until combined.
  6. Place plastic shot cups (2 oz size) on a baking sheet or tray. Carefully pour the mixture into each cup, filling them about 3/4 full. Scoop off any foam on top.
  7. Refrigerate for at least 4 hours, or overnight, until fully set.
  8. Just before serving, add toppings: a dollop of whipped cream, a sprinkle of edible glitter or sparkling sugar, and a fresh raspberry or pomegranate seeds.

Notes

For best results, use a 1:1 ratio of champagne to water. Do not skip the unflavored gelatin—it helps the shots set properly with the alcohol. Let the champagne go slightly flat before adding to prevent foaming. These can be made a day ahead and stored in the fridge for up to 5 days. For a non-alcoholic version, substitute sparkling apple cider or ginger ale.
