  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • Salt to taste
  • Freshly ground black pepper (optional)
  • 4 slices of bread (sourdough, multigrain, or whole wheat)
  • 1/2 teaspoon chipotle powder or smoked paprika
  • 1 tablespoon crumbled feta cheese (optional)
  • Handful of chopped fresh cilantro or parsley
  • 1 teaspoon sriracha sauce
  • 1 teaspoon toasted sesame seeds
  • Thinly sliced green onions
  • 1 tablespoon finely chopped fresh basil or dill
  • 1 teaspoon lemon zest
  • Drizzle of extra virgin olive oil

Instructions

  1. Toast 4 slices of your chosen bread until golden brown and crisp, about 3-5 minutes.
  2. While the bread is toasting, cut the ripe avocados in half and scoop the flesh into a mixing bowl.
  3. Add 1 tablespoon fresh lemon juice, minced garlic, a pinch of salt, and a few grinds of black pepper to the avocado.
  4. Mash together with a fork or potato masher until creamy but still a bit chunky, about 2-3 minutes.
  5. Divide the avocado mixture evenly into three small bowls for the three variations.
  6. For the Smoky Chipotle Variation: Add 1/2 teaspoon chipotle powder or smoked paprika to the first bowl and mix well. Spread on toast and top with crumbled feta and chopped cilantro or parsley.
  7. For the Spicy Sriracha Variation: Stir 1 teaspoon sriracha sauce into the second bowl. Spread on toast and garnish with toasted sesame seeds and thinly sliced green onions.
  8. For the Herby Lemon Variation: Stir 1 tablespoon chopped fresh basil or dill and 1 teaspoon lemon zest into the third bowl. Spread on toast and drizzle with extra virgin olive oil.
  9. Serve immediately while the toast is warm and avocado is creamy.

Notes

If avocado isn’t ripe, microwave whole unpeeled avocado for 10 seconds to soften slightly. Press plastic wrap directly on avocado surface to prevent browning if prepping ahead. Toast bread properly to avoid sogginess. Adjust spice levels to taste. Fresh herbs are preferred over dried.
