A quick and easy microwave mac and cheese recipe that delivers creamy, cheesy comfort in under 5 minutes, perfect for busy nights or solo meals.

Ingredients

Scale
  • ½ cup (56 grams) dry elbow macaroni
  • ½ cup (120 ml) water
  • ¼ cup (60 ml) milk (whole or 2%, or dairy-free like almond or oat milk)
  • ½ cup (60 grams) shredded sharp cheddar cheese
  • 1 tablespoon softened cream cheese
  • 1 teaspoon softened butter
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • Optional: pinch of garlic powder, smoked paprika, or mustard powder

Instructions

  1. Pour ½ cup (56 grams) of dry elbow macaroni into a microwave-safe mug. Add ½ cup (120 ml) of water, ensuring the pasta is submerged.
  2. Microwave on high for 2 to 3 minutes, stirring every minute to prevent sticking or boiling over. Pasta should be tender but not mushy.
  3. Carefully drain excess water if needed, leaving a little for the sauce if desired.
  4. Stir in ¼ cup (60 ml) milk, 1 tablespoon softened cream cheese, 1 teaspoon butter, ½ cup (60 grams) shredded sharp cheddar cheese, salt, pepper, and optional seasonings.
  5. Microwave the mixture for 1 more minute to melt the cheese and combine everything. Stir thoroughly; add more milk if sauce is too thick.
  6. Let the mug sit for 1-2 minutes before eating to allow the sauce to thicken and flavors to meld.

Notes

Stir every minute during microwaving to prevent pasta from sticking or boiling over. Use sharp cheddar for best flavor and melting. Let the dish rest after microwaving to thicken the sauce. Adjust microwave times based on your appliance’s power. Optional seasonings like garlic powder or smoked paprika add depth. For vegan or dairy-free versions, substitute milk, cream cheese, and cheddar with plant-based alternatives.
