  • 1 medium lime (about 2 tablespoons juice)
  • 1/4 cup finely diced red onion
  • 1 small jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1 medium Roma tomato, seeded and diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8–10 pitted black olives, sliced in half lengthwise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 small handful tortilla chips

Instructions

  1. Squeeze the lime juice into a mixing bowl. Add the diced red onion and stir. Let sit while prepping other ingredients.
  2. Slice each avocado in half, remove the pit, and scoop the flesh into the bowl with the lime-onion mixture. Mash with a fork to desired consistency (about 80% mashed, 20% chunky).
  3. Add minced jalapeño, chopped cilantro, diced tomato, salt, and pepper. Stir gently. Taste and adjust seasoning.
  4. Spoon the guacamole into a serving dish and spread into an even layer, shaping into a rough oval for the head.
  5. Place two olive halves on either side of the ‘neck’ area for bolts. Pipe sour cream or Greek yogurt for eyes and a mouth using a small zip-top bag with a corner snipped off.
  6. Stick tortilla chips into the top of the guacamole to resemble Frankenstein’s flat-top hair. Press firmly so they stand up.
  7. Optional: Add a slice of black olive for a belly button. Arrange extra chips around the edge for serving.
  8. Serve immediately. If making ahead, cover tightly with plastic wrap pressed directly against the surface and refrigerate for up to 2 hours. Add face details just before serving.

Notes

Let the diced onion sit in lime juice for a minute to mellow the raw flavor. Don’t over-mash the avocados; leave some chunks for texture. Press plastic wrap directly onto the surface if making ahead to prevent browning. Use a piping bag or zip-top bag for precise sour cream details.
