  • 1 lb (450g) salmon fillet, skin removed, cut into 1-inch cubes
  • 3 tablespoons (42g) unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon (15ml) olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges for serving
  • 2 tablespoons white wine or chicken/vegetable broth (optional, for deglazing)

Instructions

  1. Prep the salmon (5 minutes): Pat the salmon fillet dry with paper towels. Remove the skin if still attached. Cut the salmon into 1-inch cubes, keeping them as uniform as possible. Season the cubes with salt and pepper, tossing gently to coat.
  2. Heat the pan (2 minutes): Place a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering, about 2 minutes.
  3. Sear the salmon (4-5 minutes): Carefully place the salmon cubes in the hot pan in a single layer. Do not crowd the pan. Let cook undisturbed for 2 minutes until edges are golden and crispy. Flip each piece and cook for another 2-3 minutes until golden brown on all sides and cooked through (internal temperature of 145°F/63°C).
  4. Make the garlic butter (2 minutes): Reduce heat to low. Push salmon to one side of the pan. Add butter to the empty space and let it melt. Add minced garlic and red pepper flakes (if using). Stir for about 30 seconds until fragrant. If using wine or broth, pour it in now and let bubble for 30 seconds.
  5. Toss and finish (1 minute): Gently toss the salmon bites in the garlic butter sauce until coated. Squeeze fresh lemon juice over everything and give one more gentle toss. Total time for this step: 1-2 minutes.
  6. Serve immediately: Transfer salmon bites to a serving platter. Spoon remaining garlic butter from the pan over the top. Garnish with fresh parsley and lemon wedges. Serve hot.

Notes

For extra-crispy edges, dust salmon cubes with 1 teaspoon cornstarch before seasoning. Pat salmon very dry before cooking for best sear. Let salmon sit at room temperature 10-15 minutes before cooking for even cooking. Do not crowd the pan; cook in batches if needed. Add garlic only after reducing heat to prevent burning.
