  • 1 pound (450 grams) raw shrimp, peeled and deveined
  • 4 cloves garlic, finely minced
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Juice of half a lemon
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 8 ounces of spaghetti and cook according to package instructions, usually 8-10 minutes, until al dente. Reserve 1/2 cup (120 ml) of pasta water before draining.
  2. While pasta cooks, pat 1 pound of raw shrimp dry with paper towels.
  3. Heat 2 tablespoons olive oil and 3 tablespoons unsalted butter in a large skillet over medium heat. When butter melts and foams, add 4 minced garlic cloves and 1/4 teaspoon red pepper flakes. Stir for about 30 seconds until fragrant but not browned.
  4. Place shrimp in a single layer in the skillet. Cook for 2 minutes without moving, then flip and cook another 2 minutes until pink and opaque.
  5. Add drained spaghetti to the skillet with shrimp. Pour in reserved pasta water a little at a time, stirring, to create a silky sauce coating the pasta. Squeeze fresh lemon juice over everything and toss again.
  6. Season with salt and freshly ground black pepper to taste. Sprinkle chopped fresh parsley and grated Parmesan cheese on top if desired.
  7. Serve immediately while hot.

Notes

If pasta seems dry, add more reserved pasta water to create a silky sauce. Avoid burning garlic by cooking on medium or medium-low heat and stirring constantly. Pat shrimp dry to ensure proper searing. Cook shrimp in a single layer and avoid overcrowding the pan.
