Quick Juicy Grilled Steak with Garlic Butter

A fast and flavorful grilled steak recipe topped with a rich garlic butter, perfect for a quick and satisfying dinner.

  • 2 ribeye or sirloin steaks (about 8 oz / 225 g each), room temperature
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, softened
  • 3 large garlic cloves, minced finely
  • 1 tablespoon fresh parsley, chopped finely
  • 1 teaspoon fresh lemon juice (optional)
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. About 30 minutes before cooking, remove the steaks from the fridge to bring them to room temperature. Pat dry with paper towels.
  2. Brush both sides lightly with olive oil, then season generously with salt and freshly ground black pepper. Sprinkle smoked paprika if using.
  3. In a small bowl, combine softened butter, minced garlic, chopped parsley, and lemon juice if using. Stir until smooth and set aside at room temperature.
  4. Preheat the grill to medium-high heat (about 450°F / 230°C).
  5. Place steaks on the grill and cook for about 4-5 minutes per side for medium-rare (internal temp 130-135°F / 54-57°C). Use tongs to flip once.
  6. Remove steaks from the grill and let rest on a cutting board for 5-10 minutes.
  7. Dollop the garlic butter generously on top of the steaks while resting so it melts over the warm meat. Optionally baste the steaks with the butter.

Notes

Keep a spray bottle of water handy to control flare-ups on the grill. Do not pierce the steak with forks to retain juices. Rest the steak after grilling to redistribute juices. Garlic butter can be prepared ahead and kept refrigerated; bring to room temperature before serving.
