  • 2 pounds baby back ribs or spare ribs (trimmed of excess fat)
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and place a rack in the middle position.
  2. Remove the silver skin membrane from the back of the ribs if attached and pat the ribs dry with paper towels.
  3. In a mixing bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper. Mix until evenly blended.
  4. Brush olive oil lightly over both sides of the ribs.
  5. Sprinkle the spice mix generously over both sides, pressing it in with your hands. Let sit for 10 minutes to absorb flavors (or up to an hour in the fridge for deeper taste).
  6. Optionally, lightly spritz ribs with apple cider vinegar before covering.
  7. Place ribs meat side up on a rimmed baking sheet and cover tightly with aluminum foil.
  8. Bake covered for 25 minutes.
  9. Remove foil carefully and bake uncovered for another 5 minutes to caramelize the rub and create a slight crust.
  10. Let ribs rest for 5 minutes before serving to redistribute juices.

Notes

Remove the membrane for better seasoning penetration and tenderness. Pat ribs dry before applying rub for even coating. Cover ribs with foil during baking to trap steam and tenderize quickly. Watch the final uncovered baking step closely to avoid burning the sugar in the rub. Let ribs rest after baking to keep them juicy.
