A warm, comforting peach crisp made quickly in a microwave-safe mug using pantry staples. Ready in just 5 minutes, this dessert offers a tender peach base with a buttery, crispy topping.

Ingredients

Scale
  • ½ cup canned peaches, drained (reserve about 1 teaspoon juice)
  • 3 tablespoons old-fashioned rolled oats
  • 2 tablespoons all-purpose flour (can substitute almond flour for gluten-free)
  • 2 tablespoons packed brown sugar (light brown sugar preferred)
  • 2 tablespoons unsalted butter, melted
  • ¼ teaspoon cinnamon (optional but recommended)
  • ¼ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Drain ½ cup of canned peaches, reserving about 1 teaspoon of the juice. Place the peaches at the bottom of a microwave-safe mug and drizzle the reserved juice over them to keep moist.
  2. In a small bowl or separate mug, combine rolled oats, flour, brown sugar, cinnamon, and salt. Stir to combine.
  3. Add melted butter and vanilla extract to the oat mixture. Mix well until the oats are evenly coated and the mixture looks crumbly but holds together slightly when pressed.
  4. Sprinkle the oat topping evenly over the peaches in the mug without pressing down.
  5. Microwave on high for 2 to 3 minutes, checking at 2 minutes. The topping should be golden and peach juices bubbling. If soggy, microwave in 15-second increments until done.
  6. Let the mug crisp cool for 1 to 2 minutes before eating. Optionally, top with vanilla ice cream or whipped cream.

Notes

Melt butter gently in 10-second bursts to avoid overheating. Do not press topping down to keep it crispy. For extra crunch, add chopped nuts before microwaving. Let the crisp rest 1-2 minutes after cooking to set the topping. Optionally broil for 30 seconds for a caramelized topping if using an oven-safe dish.
