A creamy, comforting overnight oats recipe featuring peanut butter and banana. This no-cook breakfast is perfect for meal prep, requiring only 5 minutes of active time to prepare the night before.

Ingredients

Scale
  • 1/2 cup Old-Fashioned Rolled Oats
  • 1/2 cup Milk (dairy or non-dairy alternatives like almond, oat, or soy)
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Peanut Butter
  • 1/2 medium Banana, sliced
  • 1 teaspoon Honey or Maple Syrup (optional)
  • A tiny pinch of Salt

Instructions

  1. In a jar, combine the rolled oats, chia seeds, and a pinch of salt. Stir to distribute evenly.
  2. Pour in the milk and stir gently to combine. Let sit for a minute to allow oats to absorb liquid.
  3. Add the peanut butter and stir vigorously until mostly blended into the milk to avoid clumps.
  4. Add honey or maple syrup if using, and stir again. Taste and adjust sweetness if needed.
  5. Slice the banana and add to the jar. Mix half in and leave half on top for presentation.
  6. Seal the jar with a lid, give it a final shake, and refrigerate for at least 4 hours, preferably overnight.
  7. Before eating, check consistency and add a splash of milk if too thick. Stir and enjoy.

Notes

Use old-fashioned rolled oats, not quick oats or steel-cut oats, for the best texture. Stir the peanut butter well to prevent a waxy layer. For best results, refrigerate overnight (8+ hours). Can be stored in the fridge for up to 5 days.
