  • 1 cup (245g) 100% pure pumpkin puree
  • 1 cup (240ml) milk (2% dairy, oat, almond, or cashew)
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup
  • 3 tablespoons melted coconut oil or butter
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped pecans or walnuts, 1/3 cup dried cranberries or raisins, or 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin generously with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, milk, eggs, maple syrup, melted coconut oil (or butter), and vanilla extract until smooth.
  3. In a separate medium bowl, combine the rolled oats, pumpkin pie spice, baking powder, and salt. Stir to distribute the spices evenly.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold together until just combined. Do not overmix. If adding nuts, dried fruit, or chocolate chips, fold them in now.
  5. Let the mixture sit for 5 minutes to allow the oats to absorb some liquid.
  6. Portion the mixture into the prepared muffin tin using an ice cream scoop or 1/4 cup measure, filling each cup almost to the top.
  7. Bake for 18-22 minutes, until the tops are set and golden brown, and a toothpick inserted into the center comes out mostly clean.
  8. Let the oatmeal cups cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  9. Enjoy warm or at room temperature.

Notes

Don’t skip the 5-minute soaking step for creamier texture. Use old-fashioned rolled oats, not quick or steel-cut. For best results, use room temperature ingredients. Grease the pan well to prevent sticking. These freeze beautifully for up to 3 months.
