  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1 whole head garlic
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, softened
  • ⅓ cup heavy cream, warmed
  • ¼ cup whole milk, warmed
  • 1½ teaspoons fine sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Quick-roast the garlic: Preheat oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap tightly in foil, and place in a small baking dish. Roast for 15 minutes until soft and golden. Let cool slightly, then squeeze the roasted garlic out of the skins into a small bowl and mash with a fork.
  2. Boil the potatoes: While the garlic roasts, place the peeled and quartered Yukon Gold potatoes in a large pot. Cover with cold water by about 1 inch (2.5 cm). Add 1 teaspoon of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 10-12 minutes until fork-tender.
  3. Drain and dry the potatoes: Drain the potatoes in a colander. Return them to the hot pot and let them sit for 1-2 minutes to steam off excess moisture.
  4. Mash the potatoes: Add the softened butter and roasted garlic paste to the hot potatoes. Mash with a potato masher using a firm up-and-down motion until just combined, leaving a few small lumps.
  5. Add the cream and milk: Pour in the warmed heavy cream and whole milk. Fold gently with a wooden spoon or spatula until just combined. Add the remaining ½ teaspoon salt and freshly ground black pepper. Taste and adjust seasoning.
  6. Serve immediately: Transfer to a warm serving bowl. Garnish with fresh parsley if desired. Serve hot.

Notes

Start potatoes in cold water for even cooking. Salt the water generously. Warm the dairy before adding to prevent gluey texture. Don’t skip the drying step after draining. Use a timer for the garlic to avoid bitterness. Do not use a food processor or hand mixer; hand mash only.
