A quick and easy slow cooker recipe for tender beef and crisp broccoli in a savory garlic sauce, perfect for busy weeknights.

  • 2 pounds beef chuck roast, trimmed and cut into 1-inch cubes
  • 4 cups broccoli florets (about 1 large head)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup packed brown sugar
  • 6 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons rice vinegar
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Sesame seeds for garnish
  • Cooked rice for serving

Instructions

  1. Trim excess fat from chuck roast and cut into 1-inch cubes. Pat dry with paper towels.
  2. In a medium bowl or directly in the slow cooker, whisk together soy sauce, brown sugar, minced garlic, beef broth, toasted sesame oil, rice vinegar, and grated ginger. Add red pepper flakes if using.
  3. Place cubed beef in the slow cooker and pour sauce over top. Stir to coat all pieces.
  4. Cook on low for 6-7 hours or on high for 3-4 hours, until beef is fork-tender.
  5. About 30-40 minutes before serving, add broccoli florets to the slow cooker. Stir gently and cook until bright green and tender-crisp.
  6. In a small bowl, whisk together cornstarch and cold water until smooth.
  7. Once broccoli is done, turn slow cooker to high. Pour cornstarch slurry into sauce while stirring. Let cook 5-10 minutes until sauce thickens and turns glossy.
  8. Serve immediately over hot cooked rice. Garnish with sesame seeds and additional red pepper flakes if desired.

Notes

Sear the beef first for deeper flavor. Add broccoli late to avoid mushiness. Double the garlic if you love garlic. Toast sesame seeds for garnish. Make extra sauce for other dishes.
