This quick small-batch snickerdoodle cookies recipe makes exactly six cookies in under 30 minutes, perfect for lunchboxes or last-minute bake sales. With simple pantry ingredients and no chilling required, these soft, chewy cookies with a classic cinnamon-sugar coating are a crowd-pleaser.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons (25g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the softened butter and 1/2 cup granulated sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides once.
  3. Add the egg yolk and vanilla extract. Beat on medium speed until fully combined, about 30 seconds.
  4. In a small bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Do not overmix.
  6. In a small bowl, stir together the 2 tablespoons sugar and 1 teaspoon cinnamon for the coating.
  7. Using a cookie scoop or tablespoon, portion the dough into 6 equal balls (about 1.5 tablespoons each). Roll each ball between your palms until smooth, then roll in the cinnamon-sugar mixture until fully coated. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the tops look slightly crackled. The centers will still look soft and puffy.
  9. Let the cookies rest on the hot baking sheet for 5 minutes, then transfer to a cooling rack.
  10. Enjoy warm or at room temperature.

Notes

Don’t skip the cream of tartar—it gives snickerdoodles their signature tangy flavor. Watch the bake time closely; cookies go from perfectly soft to overbaked in about 60 seconds. Use room temperature butter for proper creaming. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking flour blend. For a vegan adaptation, use vegan butter and replace the egg yolk with 1 tablespoon aquafaba mixed with 1 teaspoon cornstarch.
