  • 1 ½ cups (300 g) granulated sugar
  • 1 tsp baking soda
  • 1 tsp fine salt
  • 2 tbsp unsweetened cocoa powder

  • 1 cup (240 ml) buttermilk, room temperature (or 1 cup milk + 1 tbsp lemon juice as substitute)
  • ½ cup (115 g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 2 tbsp red food coloring
  • 1 tsp pure vanilla extract
  • 1 tsp white vinegar
  • For the Cream Cheese Glaze:
  • 4 oz (115 g) cream cheese, softened
  • ½ cup (60 g) powdered sugar, sifted
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your bundt pan thoroughly with butter or non-stick spray, then dust lightly with flour.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, salt, cocoa powder, cinnamon, and cayenne pepper.
  3. In a separate bowl, combine the wet ingredients: buttermilk, melted butter, eggs, red food coloring, vanilla extract, and vinegar. Whisk until smooth and vibrant red.
  4. Slowly pour the wet mixture into the dry ingredients, stirring gently with a spatula until just combined. Do not overmix.
  5. Pour the batter into the prepared bundt pan, smoothing the top lightly. Tap the pan gently on the counter to remove air bubbles.
  6. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Remove the cake from the oven and let it cool in the pan for 15 minutes. Then invert onto a cooling rack to cool completely.
  8. While the cake cools, prepare the glaze: Beat softened cream cheese until smooth. Gradually add powdered sugar, milk, and vanilla until pourable consistency is reached.
  9. Once the cake is completely cool, drizzle the cream cheese glaze over the top. Let it set for about 10 minutes before slicing.

Notes

Adjust cayenne pepper to taste for desired heat level. Use room temperature ingredients for best texture. Grease and flour pan thoroughly to prevent sticking. If glaze thickens, stir and add milk to loosen. Can substitute gluten-free flour blend with xanthan gum and dairy-free alternatives for buttermilk and butter.
