  • 4 cups (600g) fresh ripe watermelon, cut into cubes
  • 2 tablespoons fresh lime juice (from 1 medium lime)
  • 1 to 2 tablespoons honey (adjust to taste)

Instructions

  1. Cut about 4 cups (600g) of fresh, ripe watermelon into chunks. Remove any seeds if your watermelon isn’t seedless.
  2. Roll the lime on the counter to loosen the juice, then cut in half and juice it using a citrus juicer or by hand to get about 2 tablespoons (30ml).
  3. Place watermelon chunks, freshly squeezed lime juice, and 1 tablespoon (15ml) of honey into the blender jar.
  4. Blend on low speed, then increase to high for 30-45 seconds until the mixture is silky with no large chunks. Stop and scrape down the sides if needed. If too thick, add a splash of cold water or ice cubes and blend again.
  5. Taste and adjust sweetness by adding up to 1 more tablespoon of honey if desired, then blend briefly to combine. Optionally add a tiny pinch of salt to balance flavors if too tart.
  6. Pour into glasses and serve immediately. Garnish with a lime wedge or mint sprig if desired.

Notes

Use ripe, juicy watermelon for best flavor and texture. If you want a chilled smoothie without watering it down, freeze watermelon cubes beforehand. The smoothie may separate after sitting; just stir or shake before drinking. Adjust honey and lime to taste. For vegan option, substitute honey with maple syrup.
