A perfectly balanced, icy slushie combining fresh strawberries, lemon juice, vodka, and simple syrup for a refreshing summer cocktail that’s quick and easy to make.

  • 2 cups fresh strawberries, hulled and frozen
  • 1/2 cup fresh lemon juice (from about 2 large lemons)
  • 1 cup vodka (smooth, neutral like Tito’s recommended)
  • 1/4 cup simple syrup (equal parts sugar and water, dissolved and cooled)
  • 1/2 cup cold water
  • 2 cups ice cubes
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Freeze the strawberries: rinse, hull, pat dry, and freeze for at least 4 hours or overnight.
  2. Make simple syrup if needed: combine 1/4 cup sugar and 1/4 cup water in a small pot, heat gently until sugar dissolves, then cool completely.
  3. Juice the lemons: extract about 1/2 cup fresh lemon juice from 2 large lemons, strain to remove seeds and pulp if desired.
  4. Blend the slushie: combine frozen strawberries, lemon juice, vodka, simple syrup, cold water, and ice cubes in a high-powered blender. Pulse on high for 45 seconds to 1 minute until smooth and slushy, scraping down sides as needed.
  5. Adjust texture: if too thick, add a splash more cold water and blend briefly; if too thin, add more ice cubes and pulse.
  6. Serve immediately: pour into chilled glasses and garnish with fresh mint leaves or a lemon wheel.

Notes

Freeze strawberries beforehand for best icy texture. Adjust sweetness by tasting lemon juice before adding simple syrup. Pulse blender rather than blending continuously to avoid warming. Serve in chilled glasses for longer-lasting coldness. Can be made non-alcoholic by omitting vodka and adding sparkling water or lemonade.
