These watermelon ice cubes are a quick and easy way to add a burst of fresh, juicy sweetness to your summer drinks, perfect for cooling down on hot days.

Ingredients

Scale
  • 3 cups (450g) fresh seedless watermelon chunks
  • 1 tablespoon (15 ml) fresh lime juice
  • Optional: pinch of sea salt
  • Optional: a few fresh mint leaves

Instructions

  1. Cut about 3 cups (450g) of seedless watermelon into chunks, removing any seeds.
  2. Place the watermelon chunks into a blender and pulse until smooth, about 30 seconds to 1 minute.
  3. Optional: Pour the blended watermelon through a fine mesh strainer into a bowl to remove pulp for a smoother texture.
  4. Stir in 1 tablespoon (15 ml) of fresh lime juice.
  5. Optional: Add a pinch of sea salt or a few chopped mint leaves for extra flavor.
  6. Pour the watermelon mixture evenly into an ice cube tray, leaving a small gap at the top.
  7. Freeze the tray for at least 4-6 hours, preferably overnight. Avoid moving the tray during the first hour.
  8. Once frozen solid, pop the cubes out and store them in a sealed freezer bag or container.

Notes

Use ripe watermelon for best sweetness. Avoid overblending to prevent mushy cubes. Straining the mixture results in smoother cubes. Freeze on a level surface to ensure even cubes. Store cubes in an airtight container for up to 3 months. Optional flavor variations include adding mint, berries, or a pinch of cayenne pepper.
