These savory garlic butter grilled shrimp skewers are quick, easy, and perfect for summer. They feature a buttery garlic glaze with fresh lemon and herbs, delivering juicy, flavorful shrimp every time.

Ingredients

Scale
  • 1 pound (16-20 large) shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • 810 wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. In a mixing bowl, combine melted butter, minced garlic, lemon juice, chopped parsley, salt, and black pepper. Stir well.
  3. Toss shrimp in half of the garlic butter mixture and marinate in the fridge for 10-15 minutes.
  4. Thread 4-5 shrimp per skewer, piercing near tail and head so they lay flat.
  5. Preheat grill to medium-high heat (about 400°F).
  6. Grill shrimp skewers for 2-3 minutes per side, brushing with remaining garlic butter each time you flip, until shrimp are opaque and slightly charred.
  7. Remove from grill, squeeze extra lemon juice over skewers, garnish with parsley if desired, and serve immediately.

Notes

Do not overcook shrimp to avoid rubbery texture. Brush garlic butter multiple times during grilling for moist, flavorful shrimp. Soak wooden skewers to prevent burning. Let shrimp rest for 1-2 minutes after grilling to redistribute juices. For dairy-free option, substitute butter with vegan butter or avocado oil.
