This creamy, kid-approved slow cooker pumpkin coconut soup is a dump-and-go meal that’s naturally gluten-free, dairy-free, and vegan. With simple pantry ingredients and a velvety texture, it’s perfect for busy weeknights and makes delicious leftovers.

  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (15 oz) pumpkin puree
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Optional garnish: pumpkin seeds, coconut cream, fresh cilantro

Instructions

  1. Prep your aromatics. Dice your onion into small pieces — about 1/4-inch cubes. Mince your garlic cloves and grate your fresh ginger.
  2. Combine everything in the slow cooker. Add the diced onion, minced garlic, grated ginger, pumpkin puree, coconut milk, vegetable broth, maple syrup, salt, pepper, cinnamon, and nutmeg. Stir until well combined.
  3. Set it and forget it. Put the lid on your slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The soup is done when the onions are soft and translucent.
  4. Blend until smooth. Use an immersion blender to puree the soup right in the slow cooker until completely smooth. If using a regular blender, let the soup cool for about 10 minutes first, then blend in batches.
  5. Taste and adjust. Add more salt, pepper, or maple syrup as needed.
  6. Serve it up. Ladle the soup into bowls and garnish with optional toppings if desired.

Notes

Don’t skip the fresh ginger — it adds warmth without being spicy. Use full-fat coconut milk for the best creamy texture. Season at the end after blending. This soup tastes even better the next day. If too thick, add extra broth; if too thin, cook with lid off for 20-30 minutes.
