  • 3 tablespoons white miso paste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 large eggs
  • 2 packs fresh or dried ramen noodles (about 200g total)
  • 1 cup shiitake mushrooms, sliced
  • 2 green onions, thinly sliced
  • 1 sheet nori (seaweed), cut into strips
  • 1 tablespoon sesame seeds, toasted
  • Optional: chili oil, corn kernels, bamboo shoots

Instructions

  1. Start the eggs: Bring a small pot of water to a rolling boil. Gently lower in the eggs using a slotted spoon. Boil for exactly 6 minutes and 30 seconds for jammy yolks. Immediately transfer them to an ice water bath to stop the cooking. Let them sit while you work on the rest.
  2. Sauté the aromatics: In your medium pot, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and grated ginger. Cook for about 1 minute until fragrant. Add the sliced shiitake mushrooms and cook for another 2 minutes until they start to soften.
  3. Build the broth: Pour in the chicken or vegetable broth. Add the soy sauce, rice vinegar, and chili garlic sauce. Stir everything together and bring it to a gentle simmer. Let it bubble away for 3-4 minutes.
  4. Incorporate the miso: Remove the pot from heat. Place the miso paste in a small bowl and ladle in about 1/4 cup of the hot broth. Whisk until the miso is completely dissolved. Then pour this mixture back into the pot and stir. Never boil miso directly.
  5. Cook the noodles: While the broth simmers, cook your ramen noodles according to package directions. Fresh noodles usually take 2-3 minutes, dried ones about 4. Drain them well and divide between your serving bowls.
  6. Finish the broth: Stir in the toasted sesame oil. Taste the broth and adjust seasoning—add more chili garlic sauce if you want extra heat, or a pinch of salt if needed.
  7. Assemble the bowls: Ladle the hot broth over the noodles. Peel the soft-boiled eggs, slice them in half, and place them on top. Garnish with sliced green onions, nori strips, and toasted sesame seeds. Drizzle with extra chili oil if desired.

Notes

Do not boil miso directly; dissolve it in a small amount of hot broth first. Use eggs that are at least a week old for easier peeling. Cook noodles right before serving to avoid mushiness. Toast sesame seeds in a dry pan for 2 minutes until fragrant. The broth can be made ahead (without miso) and stored for up to 3 days.
