  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tablespoons pumpkin purée
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon fine sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the base ingredients. In your medium saucepan, add the water, granulated sugar, and brown sugar. Place it over medium heat and whisk gently until the sugars dissolve completely, about 2 to 3 minutes.
  2. Add the pumpkin and whole spices. Whisk in the pumpkin purée until fully incorporated. Drop in the cinnamon sticks and whole cloves. Bring the mixture to a gentle simmer, not a rolling boil, about 4 to 5 minutes.
  3. Simmer and infuse. Reduce the heat to low and let it simmer for 10 minutes, stirring occasionally. Skim off any foam that forms.
  4. Add the ground spices. Remove the saucepan from the heat. Whisk in the ground ginger, nutmeg, allspice, and salt. Let it sit off the heat for 5 minutes to allow the flavors to marry.
  5. Strain the syrup. Place a fine-mesh strainer over a heat-safe bowl or jar. Carefully pour the syrup through the strainer, pressing gently on the solids. Discard the cinnamon sticks and cloves.
  6. Finish with vanilla. Once the syrup has cooled for about 5 minutes (still warm but not hot), stir in the vanilla extract.
  7. Cool and store. Let the syrup cool completely at room temperature, about 30 to 45 minutes. Transfer to a clean glass jar or bottle, seal tightly, and refrigerate.

Notes

For a clearer syrup, omit the pumpkin purée and add an extra tablespoon of water. The syrup tastes best after 24 hours in the fridge. If crystallized, place the sealed jar in a bowl of hot water for 10 minutes and shake gently.
