  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese (freshly shredded)
  • ¼ teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 1 cup sour cream
  • 1 cup pico de gallo or salsa
  • 1 cup pickled jalapeños (drained)
  • 1 avocado, diced (or 1 cup guacamole)
  • ½ cup chopped fresh cilantro
  • ½ cup sliced black olives (optional)
  • 2 green onions, sliced
  • Lime wedges for serving

  1. Make the Chili: Heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart, until browned (6-8 minutes). Leave about 1 tablespoon of fat.
