  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups grated zucchini (about 2 medium zucchinis), squeezed to remove excess water
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Brown the butter: Melt 1/2 cup unsalted butter in a light-colored saucepan over medium heat, stirring frequently until it foams and turns golden brown with a nutty aroma (about 5-7 minutes). Transfer to a bowl and let cool slightly.
  2. Grate the zucchini using a box grater or food processor. Wrap in a clean kitchen towel and squeeze gently to remove excess moisture.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and browned butter until combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift or whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Avoid overmixing.
  6. Fold in the grated zucchini and chocolate chips evenly throughout the batter.
  7. Grease a 9×5 inch loaf pan well or line it with parchment paper.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 40 minutes if the top browns too quickly.
