  • 1 cup pomegranate juice (such as POM Wonderful)
  • 1/2 cup honey (or agave syrup for vegan)
  • 1 teaspoon vanilla extract (pure, not imitation)
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 4 cups sparkling water (chilled; club soda or seltzer)
  • 1 cup frozen pomegranate arils
  • 1 blood orange, thinly sliced
  • Ice cubes (optional)
  • Fresh rosemary sprigs (optional)

Instructions

  1. Dissolve the honey: In a small bowl, combine 1/2 cup honey with 2 tablespoons warm water. Stir until completely dissolved and syrupy. If still thick, microwave for 10 seconds.
  2. Mix the base: In a punch bowl or pitcher, combine 4 cups blood orange juice, 1 cup pomegranate juice, the dissolved honey, 1 teaspoon vanilla extract, 1/4 teaspoon smoked paprika, and 1/4 teaspoon salt. Stir well with a wooden spoon until evenly combined. The color should be deep, dark red.
  3. Chill the base: Cover and refrigerate for at least 1 hour, or up to overnight, to let flavors meld.
  4. Add fizz and garnishes: Just before serving, pour in 4 cups chilled sparkling water and stir gently. Add 1 cup frozen pomegranate arils and blood orange slices. If using, tuck rosemary sprigs around the edges.
  5. Serve immediately: Ladle into glasses, ensuring each serving gets a few arils and a slice of blood orange. The punch stays cold for about 30 minutes; add ice cubes if needed.

Notes

Don’t add sparkling water until the last minute to keep the fizz. Use frozen pomegranate arils instead of ice to avoid dilution. For a boozy version, add 1-2 cups silver tequila, light rum, or mezcal. The base can be made up to 3 days ahead and stored in the fridge.
