  • 1 tablespoon olive oil (for roasting garlic)
  • Pinch of salt
  • 1 tablespoon olive oil or butter (for soup base)
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 1 medium carrot, chopped
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup dried elderberries
  • 4 cups vegetable or chicken broth (low-sodium preferred)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon turmeric (optional)
  • Salt and black pepper to taste
  • 1 tablespoon apple cider vinegar or lemon juice
  • Fresh parsley or thyme sprigs (for garnish, optional)
  • A drizzle of olive oil or coconut cream (for garnish, optional)
  • Croutons or toasted seeds (for garnish, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off each head of garlic to expose the cloves. Place each head on a piece of aluminum foil, drizzle with 1/2 tablespoon of olive oil per head, and sprinkle with a pinch of salt. Wrap the foil tightly around the garlic. Roast for 30-35 minutes, until the cloves are soft and golden. Let cool slightly, then squeeze the soft cloves out of their skins. Set aside.
  2. While the garlic roasts, heat 1 tablespoon of olive oil or butter in a large soup pot over medium heat. Add the chopped onion, celery, and carrot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and the onion is translucent. Add the grated ginger and cook for 1 more minute until fragrant.
  3. Add the dried elderberries, vegetable or chicken broth, dried thyme, and turmeric (if using) to the pot. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 20 minutes. The elderberries will plump up and release their deep purple color.
  4. Place a fine-mesh strainer over a large bowl or another pot. Carefully pour the broth mixture through the strainer, pressing on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Return the strained broth to the pot.
  5. Add the roasted garlic cloves to the strained broth in the pot. Use an immersion blender to puree the soup until it is completely smooth and velvety. If using a standard blender, work in batches, filling the blender no more than halfway.
  6. Stir in the apple cider vinegar or lemon juice. Taste and season generously with salt and black pepper. Simmer for another 2-3 minutes to let the flavors meld.
  7. Ladle the soup into bowls. Garnish with fresh parsley, a drizzle of olive oil, and a few croutons if desired.

Notes

Don’t skip roasting the garlic; it mellows the flavor. Straining the elderberries is essential to avoid a gritty texture. Season at the end as elderberries vary in tartness. The soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
