Ingredients

Scale
  • Apple Cider Vinegar (Raw, Unfiltered) – enough to submerge ingredients
  • 810 cloves Fresh Garlic, peeled and crushed
  • 3-inch piece Fresh Ginger, thinly sliced
  • 2-inch piece Fresh Horseradish Root, peeled and chopped
  • 2-inch piece Fresh Turmeric Root, thinly sliced
  • 1 small Fresh Jalapeรฑo, sliced (seeds included for extra heat, or removed for less)
  • ยฝ medium Red or Yellow Onion, roughly chopped
  • 1 Lemon, thinly sliced (rind on)
  • 1 small Orange, thinly sliced (rind on)
  • 24 tablespoons Raw Honey (to taste, added after infusion)
  • 1 teaspoon Black Peppercorns (optional)
  • 1 Star Anise (optional)
  • Pinch of Cayenne Pepper (optional)

Instructions

  1. Prep Your Ingredients: Wash all produce. Peel the ginger and turmeric. Roughly chop the onion, slice the jalapeรฑo, lemon, and orange into thin rounds. Peel and crush the garlic cloves with the side of your knife.
  2. Layer in the Jar: In a clean quart-size mason jar, layer the ingredients starting with the harder items: crushed garlic, chopped ginger, turmeric, and horseradish. Then add the onion, jalapeรฑo, and citrus slices. Add optional spices if using.
  3. Muddle Gently: Using a wooden spoon or muddler, gently press down on the ingredients to bruise them and release their essential oils.
  4. Pour the Vinegar: Pour raw, unfiltered apple cider vinegar over the ingredients until they are completely submerged by at least an inch.
  5. Seal and Shake: Screw the lid on tightly and give the jar a good shake.
  6. Label and Store: Label the jar with the date and contents. Place in a cool, dark place (like a pantry) and let steep for 4 to 6 weeks. Shake gently every few days.
  7. Taste and Strain: After steeping, taste the liquid. If desired strength, strain through a fine-mesh strainer or cheesecloth into a bowl, pressing on solids to extract all liquid. Discard solids.
  8. Sweeten to Taste: Pour the strained liquid back into a clean jar or storage bottles. Add raw honey starting with 2 tablespoons, stirring or shaking to dissolve. Taste and add more honey if desired.
  9. Bottle and Store: Use a funnel to pour the finished fire cider into small glass bottles. Store in the refrigerator.

Notes

Muddling is crucial for releasing flavors. Patience is keyโ€”a 4-6 week steep yields the best results. If sensitive to spice, start with half a jalapeรฑo (without seeds) and skip cayenne. Use raw, unfiltered apple cider vinegar for best flavor and probiotic benefits. Store in a cool, dark place during infusion. The finished tonic can be used as a salad dressing, marinade, or added to soups and stews.
